If there’s one thing I enjoy when visiting a new city, it’s the food and Cagayan de Oro didn’t disappoint. From the moment I stepped into Cogon Night Market, I was surrounded by sizzling grills, food smoke in the air, and the smell of spices pulling me in every direction. There’s just so much to try! I wandered through the food stalls and tasted some of their best street eats:
Sisig cooked fresh right on the street, crispy and tasty with just the right kick.
Shawarma that’s packed with flavor, meat, and creamy garlic sauce (so good, I almost came back for seconds).
And of course… Chicken Proven! “ Chicken proven crunchy, flavorful, and best enjoyed with suka(vinegar) with lots of chilis.

proven (short for proventriculus) is a part of the chicken’s digestive system. It might sound a bit unusual, but when it’s seasoned and deep-fried, it turns into this crispy, addictive street snack that’s popular in many parts of Visayas and Mindanao.
What I enjoy most about night markets like Cogon isn’t just the food it’s the atmosphere. People laughing, vendors calling out their specialties, strangers bonding over their favorite food finds. You can really feel the community vibe.
