It’s been one of those weeks where the Swiss air still has that bite to it, despite the calendar moving forward. When the fog settles over the hills here, there is nothing my family craves more than something warm, creamy, and filling.

Today, I wanted to share a little "kitchen therapy" session. I’ve been experimenting with a classic that never fails: Creamy Chicken Mushroom.

There’s something so satisfying about the sound of chicken thighs hitting a hot pan. I like to get that skin really golden and crisp before moving on to the stars of the show—the mushrooms. Living here, we get such wonderful fresh produce, and the earthy smell of mushrooms sautéing in butter with a bit of garlic always makes the house feel like a proper home.

I’m not a professional chef by any means (not yet, praying to be soon!), just a mom making the most of my Swiss kitchen. The secret, I’ve found, is letting the sauce simmer just long enough so the cream thickens and wraps around the chicken perfectly.

I served this tonight with some simple mash (perfect for soaking up that sauce!), and for a moment, the cold outside didn't matter at all.

Quick Breakdown of my process:

  • The Protein: Chicken thighs (seasoned simply with salt and pepper). The Veg: Plenty of sliced brown mushrooms and aromatics.

  • The Sauce: A splash of broth, heavy cream, and a handful of fresh herbs to brighten it up. It’s a simple dish, but it’s these little moments—the steam rising from the plate and the quiet dinner conversation—that make up my everyday life here in Switzerland.
