A fun way to enjoy colorful vegetables wrapped in rice paper to make delicious snacks.
Are you familiar with rice paper which is used to wrap food? Actually, I'm not familiar with rice paper, especially in Indonesia. Rice paper is not a food ingredient that makes Indonesians curious.
Culture influences how a group enjoys their food. In Indonesia, people prefer snacks served fried using flour but still crispy in texture. That's why in my area I'm not familiar with thin rice paper and it can't provide a crispy texture as thick as flour in general.
I've been curious about serving vegetables using rice paper for a long time. Especially because I love vegan food, food recipes using variations of rice paper always keep appearing on the homepage of my Pinterest account.
Finally, this time I made a snack that was quite simple to make from the main ingredient, namely rice paper. Indeed, it is quite simple, but it turns out I was quite overwhelmed and had difficulty conquering rice paper. Especially during the softening step and folding the filling with rice paper.
In this variation of the recipe, I tried to use an air-fryer to improve the overall texture of these snacks. Luckily, it worked quite well even though behind the scenes I had to repeat several times to fold the rice paper. If I failed, I definitely wouldn't be sharing this recipe. So, stay tuned!
THE INGREDIENTS
- rice paper, about 8-10 sheets, according to the filling portion
- a carrot
- half of cabbage, you can use the purple one or cabbage in general
- 100 grams of tofu or 1/4 cup of chopped tofu
- 4 small cloves of red onion, or half of a large clove shallot, finely chopped
- 2 cloves of garlic
- 1/2 of teaspoon salt
- 1/2 of teaspoon coriander powder
- (optional) 1 teaspoon of chili flakes

Actually, we can immediately serve rice paper rolls without any cooking steps again. Because rice paper can already be eaten. Also, the vegetables are already cooked.
I know this snack will be strange without frying for my husband. So, I used the air-fryer to do the final touches on these rice paper rolls. Before placing it in the air-fryer basket, I smeared the entire surface of the rice paper rolls with oil. Then, I need 7 minutes more to air-fryer those all rice paper rolls.
My suggestion, if you have a non-stick frying pan, then it is a good choice to fry rice paper rolls with a little oil.
Glad, my first trying, can be good snacks in shapes. For the taste, no doubt. Oh, I didn't expect it, just eating two rice paper rolls made me so full!
