Spicy Garlic-Butter Chicken

It's the weekend again, and on weekends, I usually cook a few special dishes for my family, especially my daughter @tegoshei. She usually takes some days off on weekends, but recently she has been working on weekends, though she has a longer break than on weekdays. So, to relieve her stress, I wanted to comfort her with her favorite foods.

Last Friday night, I was searching the internet for recipes and came across a chicken dish that used some ingredients I already have at home. I don’t usually follow cooking methods exactly as I see them. Instead, I take into account my family’s tastes or preferences and what I can afford or find locally. It’s also very important for me to choose ingredients that are safe for my daughter, who has allergies to certain foods, especially seafood. So, without further ado, let’s prepare a yummylicious spicy garlic-butter chicken!

Spicy Garlic-Butter Chicken




INGREDIENTS:



  • Chicken (I used drumstick)
  • Potato
  • Garlic
  • Butter
  • Green Chili
  • Ginger
  • Spring Onion
  • Lemon
  • Soy Sauce
  • Canola Oil
  • Salt
  • Ground Black Pepper
  • Magic Sarap
  • Sprite
  • Evaporated Milk

PREPARATION:



Wash the chicken thoroughly.
Marinate with 1/2 cup Sprite to help tenderize the meat. Add some soy sauce, ground black pepper, sliced ginger and a squeeze of lemon juice. Then cover the bowl with cling wrap and set aside.


Wash and peel potatoes, and then cut into your desired shape and size that suits the chicken's size and cut.
Crush and peel garlic. Divide into two portions, one part for bigger sizes of crushed garlic and a small portion for a tiny cut of the garlic.
Wash the spring onion and cut it into two parts. Cut the white spring into bigger pieces and the green into smaller pieces. Then, blanch the green spring onion.
Wash and peel ginger, then cut into small pieces.
Set them all aside.

COOKING TIME:



Heat a small amount of canola oil in the cooker or pan. Then roast the tiny cut garlic until brown and crispy. Transfer to a plate and set aside.




Add some more canola oil to the pan and then fry the potatoes until golden brown.


With the remaining oil in the pan, sauté garlic, white spring onion, green chili and ginger until fragrant. Then add the marinated chicken, and sauté them together with the aromatics.

Continue cooking and flip the chicken from time to time, and wait until the juice from the chicken renders and evaporates. Then add the marinated sauce, add a little of the magic sarap seasoning and continue cooking until the meat becomes tender.



Then, add one cup of evaporated milk to lessen the spiciness, or else I can't tolerate eating it.😊


Continue cooking until the sauce thickens then add the fried potatoes and add 1 1/2 tbsp of butter to make it more savory. Then sprinkle some roasted garlic and green spring onions.



And there it is!! All done!!
It looks so beautiful and really tempting. I'm so happy and proud that again my family loves it so much again because they both like spicy food. It's always my goal to serve a good and delicious meal for my family. And it's always a great feeling when they praise me and ask what I'm going to cook next time. 🥰
