I was born in the countryside and dishes with coconut milk is really abundant. Looking at these scrumptious dishes makes me remember my childhood days. My father was good at cooking, and when there was nothing stored in the kitchen, he would just come up with a vegetable dish mixed with coconut milk (similar to the vegetable dish above). I enjoyed the part where he manually grated the coconut meat with the use of a traditional tool. I loved eating fresh coconut meat. It's not only for savory dishes, but also compatible with delicacies made of glutinous rice, just like the one wrapped with banana leaf above. Indeed, the coconut is a tree of life in the Philippines. The tree has numerous uses aside from the fruit itself.
