Not a family recipe... it’s a localized Thai-style pineapple fried rice. Definitely worth trying if they love pineapple! 😋

I'll give it a try once the weather cools down a bit. These days we are doing as little cooking as possible. It's just too darn hot. Thank goodness for sandwiches.
Today's breakfast was a ham and cheese toast. Very simple and other than some small heat from the toaster oven which is small, the kitchen stayed cool.
Simple breakfast but sounds tasty... and keeping the kitchen cool is a bonus! 😄
