In this post I will be sharing with you how to make Nigerian egg sauce and boiled yam. In a Nigerian home, there is nothing that beats a good meal because it brings the whole family together from the aroma to taste and yam with egg sauce is one classic meal in Nigeria. Whether it is for breakfast or lunch, it is a meal that can be very filling and of course nutritious for both kids and adults.
This recipe can be adjusted to your taste or preferences and by that I mean you can add extra protein like fish, sardine, corned beef etc. It can also be enjoyed just the way I prepared mine.
Ingredients
- 1 tuber of yam

- 3 eggs

- 3 scotch bonnet

5 medium tomatoes

3 big carrots

1 medium onion

2 tbsp vegetable oil
1 seasoning cube
Salt to taste
Step by Step
Start by cooking the yam because it will take a bit longer to get done than the egg sauce.

So, peel the yam and wash it thoroughly and place in a pot and cook until it is done.

You may add some salt to taste depending on your preference.
Next, prep all you will need for your egg sauce. Start by washing your scotch bonnet, tomatoes, carrots and onions.

When you are done washing, slice/dice them accordingly to your desired sizes.
Next,crack the eggs in a bowl and whisk it. Set it aside for later.

Next, in a frying pan that is placed on medium heat add some vegetable oil and allow it to heat up.

Add some onions and sauté for few seconds.

Next add the tomatoes and let it cook for about 3 to 5 minutes on medium heat.

Ensure you stir it at intervals to prevent it from burning.
Then the scotch bonnet can go in at this point. Stir at intervals too to prevent burning.

Next, add your seasoning cubes, and salt. Check the taste and adjust it accordingly if needed.

We will toss in our carrots next as we begin to round up the process and this is to ensure it doesn't lose its crunchiness.
Next, pour the eggs into the pan and allow it sit for some seconds before you stir or turn it.

After about a minute or two stir all together and allow it to simmer.

Your egg sauce is ready.
Serve the eggs with some boiled eggs.
