Have you ever taken some time to wonder how the fruits and vegetables that you purchase in the market are always fresh? From mangoes, oranges, pepper, tomatoes, okra, cucumbers to pineapples and so on - they are mostly fresh as they are displayed by the sellers but on the flip side after a day or two that you've bought them they begin to lose that green or freshness.
The BIG question is that is there any method or preservative that market sellers use to ensure that their goods are fresh? Or on the other hand, do they sell all their fruits in a day and order for new fresh ones for the next day? Of course, I wouldn't buy any fruit that is getting spoilt and this is the case with every other buyer, so how do these men and women ensure that their customers are satisfied.
As a result of my curiosity I have had to ask questions from some of them on how they are able to preserve their fruits and perishable foods in the market. The common technique os that which a perpetual market goer in Nigeria can testify to. This is the constant sprinkling of water on these fruits to chase away flies that would perch and contaminate the fruits on the long run. Water is also used to keep the freshness of these perishable items. In other words, water is a major instrument used to ensure that these perishable foods don't spoil fast.
Additionally, most of these perishable food items are sold in an open space which means that there is high ventilation. These foods retain their freshness as a result of exposure to fresh air. The goods may get spoilt in no time if they are not adequately exposed to fresh air. This does not connote that they don't record some spoilt ones. But the good news is that depending on the goods, some can still be sold at cheaper rates. At that point the market seller wouldn't have any choice than to sell it off at a cheaper rate because the more it stays in his shop the more it gets spoilt.
I also asked if they restock on a daily basis but I got to know that they don't. They would only restock when they are running out of stocks. Well, it will be stressful and difficult to keep with demand if they buy new stocks every day. Some of these perishables do get spoilt within few days, hence the need to keep jt fresh.
