For over a decade now, every festive period we eat the same meals of either swallow, fried or jollof rice. We have eaten this meals repeatedly to the extent that my partner is tired of it then i decided to try something new for a change.
The first time i tasted chicken curry stew was through a friend about twelve years ago but i could not get enough of it nor did i ever think of re-creating it on my own till recently.
As eid was approaching, i became bothered. I wanted my family to eat something different from our everyday food so i decided to try cooking this Chicken curry stew.

I made a list if the things i needed for the stew which includes carrots, green pepper, yellow paper (was unable to get it), onion, spring onions, pea, green pea, sweet corn, chicken breast, curry, thyme, and corn starch.
The first major set back i had was that chicken breast and yellow pepper were not available so i had to buy other available part of chicken with enough meat and cook without yellow paper.
I washed and rinse the chicken, seasoned and boiled for twenty five minutes then remove the bones before frying for few minutes. I also washed my vegetables before slicing them separately.

After this, i stir fried my vegetables separately with seasoning, salt and curry then set aside. In a clean pot, i put the chicken stock and added some water seasoning, salt, curry and little quantity of thyme them i covered the put in a slow heat to bring to boil.
After this, i added the chicken and the stir fried vegetables. As it was boiling slowly, i added my already diluted corn flour and left on slow heat for about five minutes. Alas my curry chicken stew was ready.
I served it with white rice and am happy to tell you that my family likes it. One thing i like with this stew is that i used small quantity of vegetable oil, it gives advantage to eat enough vegetables and it's very easy and fast to prepare

Though i am not a chef but i am glad i tried this. If there is anything i did not do right in my preparation, kindly point it out as i am open to learning something new.
