Choosing the best thing I've ever eaten is wonderfully difficult! While I’ve loved Balearic crab meatballs and Mexican churros, two dishes stand above all. First, a grilled foal steak—so tender it needs no knife, melting with a lasting, sublime taste that makes other meats seem crude. Equal to it are bigoli with duck ragù; its superb, light flavor is something I could eat daily. Ultimately, my winners are from home cooking and local festivals, not Michelin-starred restaurants. The most profound flavors are often the simplest and most heartfelt.
