









Today, May 21, my friend Gabriel, is having his birthday and in our group we had planned to make him his favorite cake to surprise him, a pineapple cake. Things got a little complicated because of my friends' work and I made it at home so as not to lose the surprise factor.
This is one of the easiest cakes to make and I want to take this opportunity to share the recipe with you.
Ingredients:
- 1 ripe pineapple
- 3 eggs
- 250 gr flour
- 200 gr of sugar
- Candied cherries
- 200 gr of butter
- 1 tablespoon vanilla
- 1 tablespoon pineapple essence
The preparation is quite simple, we are going to peel and chop the pineapple, reserving the best slices to decorate by removing the center with a duya or round mold so that the final result is neat, the remaining pineapple will be liquefied to get two cups of juice that we will boil together with the slices to remove the acidity of the fruit.
Next, cream the butter together with half of the sugar, adding the egg yolks and finally the juice to which we will add vanilla and pineapple essence. Then, sift the flour to avoid lumps and finally add the egg whites previously beaten stiff.
We will take it to the oven for 45 minutes at 180 degrees. Meanwhile, we will make a syrup to soak the cake and make it moist, we will use a cup of juice, the remaining sugar and vanilla.
When we take out the cake, pour it, wait for it to rest, turn it over and decorate it with cherries.
