Today I would like yo share the recipe of a popular and a traditional appetizer recipe made from besan or chickpea flour batter by Streaming it, it is Gujarati cuisine but now available all over the india and even globally too. It is soft Sponge Cake made up of Chickpea flour, some extra tempering to make it more delicious and Flavorful. It is sweet and Savory in Taste, you can enjoy it anytime of the Day as Snacks or Breakfast. It is healthy recipe as it contain almost no oil and even made up of Chickpea flour, it is quick to made with Less ingredients. Try this gujarti appetizer and let me know how it is...

Ingredients📃
For Batter
• 1½ cup besan / gram flour
• 2 tbsp rava(semolina).
• ¼ tsp turmeric
• 1 tsp sugar
• pinch hing / asafoetida
• ½ tsp salt(salt to taste)
• 1 tbsp lemon juice
• 1 tbsp oil
• 1 cup water
• ½ tsp ENO/ Baking Soda.
for tempering:
• 3 tsp oil.
• ½ tsp mustard Seeds.
• Pinch hing / asafoetida
• few curry leaves
• 2 Slit Green chilli
• 1 cup water
• 1 tsp sugar
• ¼ tsp salt
• 1 tsp lemon juice
Process 👨🏻🍳
firstly, in a large mixing bowl sieve besan and rava. Then turmeric, sugar, hing, salt, lemon juice and oil.
prepare a smooth batter adding 1 cup of water or as required. At the End add the ENO/ Baking Soda.
Grease the Container with Oil/desi, so that your batter didn't get Stick to the Bottom.
Now Pour the Batter into Batter container, tap the container twice-thrice to remove the air from the Batter.
Once your Batter is ready to stream, Add some water to the streamer, Stream it for 25-30 Minutes.
While your Dhokla is Streaming, on the other side make the tempering.
now cool the dhokla for 5 minutes and then unmolded it.
Take a kadai/tadka pan ,heat the oil, Mustars seeds and Asafoetida,
also add 2 green chilli, few curry leaves and allow to splutter.
further add water, sugar and salt, Mix it well. Boil the water for atleast 5 minutes. add lemon juice and mix well.
further, cut the dhokla to the desired shape.
pour the tempering over dhokla.
garnish the dhokla with 2 tbsp chopped coriander leaves. Refrigerate the dkhola and serve to your friends and family.
You can see the perfect sponge, the one tip you should not forget while making dhokla is whisk the dhokla batter well before adding eno/baking soda for soft and spongy dhokla.
