Today I would like to share the recipe of Dry Mix Veg Recipe it is unique and interesting dry sabji or vegetable-based recipe made with a choice of vegetables coated with aromatic and flavors of indian spices. This dry mix veg is served as side dish to your meal or can be serve with a paratha or Roti(indian Breads), can be served during lunch or Dinner. It is healthy and delicious in taste and Common in indian household. Even you can add more vegetables of your choice and availability. It is quick and easy to prepared, even one pot recipe. Try this recipe, 'm sure you gonna love it.

Ingredients📃
• 2 tsp oil.
• ½ tsp cumin.
• Pinch of asafoetida
• ½ tsp kasuri Methi.
• 1 chopped onion.
• ½ chopped capsicum.
• 1 diced Potato.
• 1 chopped Carrot.
• 4-5 Florets of cauliflower.
• 3-4 cloves of garlic.
• ½ tsp chilli powder.
• ½ tsp coriander powder.
• ¼ tsp garam masala.
• Salt to taste.
• Green Coriander leaves for Garnish.

Preparation

Chopped the onion and Garlic.

Wash the vegetables thoroughly and cut them as I have shown in the photo to make delicious mix veg recipe.
Let's Start 👨🏻🍳

Heat the oil in the kadai, add the cumin seeds and asafoetida then wait untill it starts sputtering, then add chopped onions and garlic, then saute the onion untill it get translucent.

once your onion is done, then add chopped capsicum.saute it for a minute.

Lower the flame, add the kasthuri methi.
Tip: Rub Kasuri Methi between your palms before adding it to enhance its flavor and aroma.

Further add the chopped potatoes, carrot and cauliflower.

keeping the flame on low, add ½ chilli powder, cumin powder, coriander powder, garam masala and salt to taste.


Mix well so that spices get well coated with veggies.
In my opinion, the taste and aroma found in Indian spices are unmatched by any other spices in the world. All our dishes are made using common ingredients, yet every single one has its own unique flavor and taste.

Cover and cook veggies on medium heat for about 8-10 minutes.
Tip : If you feel veggies are sticking to the pan than add 1-2 tbsp water and cook again.

Cook untill your veg get soft and cooked well.

Add coriander leaves and mix well. Mix veg dry is all ready. Serve the hot mix veg with Paratha or roti(indian bread) or can be served as side dish in your meal.
