It feels great taking down one of my cravings today because 2025 has been a very busy one for me, and I barely have the time for cravings, but immediately I realized that today would be a free one for me. I decided to prepare one of the foods on my craving list, and the outcome was magical.
This popular and delicious Nigerian food is known as Ekuru or ofuloju, while in English, it's called Steamed Beans Cake. The recipe is made from beans, and it's usually served with fried stew, which I also made to balance the food equation.
Despite the high consumption of this food by many Yorubas, many people prefer purchasing it with the excuse that it's stressful to prepare but that's not the case for me. I enjoy preparing the meal myself for hygiene's sake, and there's this level of satisfaction I derive from making this recipe myself.
Moreover, the preparation is easy, and it's not time-consuming. I bet that someone trying it for the first time can get it right by just following the procedure I explained below.
Ingredients.
1½ Cup of Beans
125ml of palm oil
3 pieces of dry fish
2 pieces of eggs
2 pieces of small onions.
1 teaspoon of salt
2 pieces of seasoning cubes
40cl of mixed pepper.
1 piece of cowskin.
Procedure.
Like I mentioned earlier, the procedure of making this recipe is very easy.
- I started by removing or peeling the back of my beans which is very important.

- I soaked the beans in water and rubbed them between my palm continuously. The back peeled off slowly until I got rid of them.

It's almost impossible to get rid of all the beans back but ensure you remove 99% of the beans back.
- I allowed the beans to remain in water for about 30 minutes so they wouldn't soften and be easy to blend.
- After 30 minutes, I used my blender, adding a little quantity of water because excess water will only make your steamed bean cake watery, and you won't like that. I blended until it was smooth and moved to the next phase.

- I turned the blended beans into a bowl and added ½ teaspoon of salt.
- I stirred the beans with a turning stick ensuring the salt blends in well.
- I got a small plastic bags for the steaming but you can use other type of containers if you have.
- I filled the plastic bags with little quantity of the blended beans and tied up the opening very well so the beans doesn't spill while steaming.

- I gently arranged the plastic bags filled with blended into the pot and added enough water. If you are using plastic bags as well, ensure you use enough water so that the water don't dry up quickly.

- I covered the pot and allowed the blended beans to steam for about 40 minutes.

While it was steaming, I prepared my sauce, which is the best part of the meal for me.
- I washed the fish and cow skin in salt water before cutting them into smaller sizes.

- I peeled the onions and cut them into bits too.
- I heated my pot and turned the palm oil into the hot pot.

- I added the onions and allowed it to fry for about a minute under low heat.

- I added the dry fish and cow skin, allowing them to fry for another minute.

- The eggs and mixed pepper came in next, you can see the sauce is almost ready.

- I added ½ teaspoon of salt and 2 cubes of seasoning.

- I stirred the mixture ensuring the seasoning blends in while before allowing them to fry for another 8 minutes under low heat.
After some minutes, the steamed beans cake was ready and I served myself.
