The Ultimate Way I Prepared My Street-Style Omelette Egg Veggie Sandwich

If you are not the always preoccupied or the lazy type, if you ask me I will tell you that homemade meals are the best in a way that they are more hygienic, hearty and carefully made with caution just for you or your family.

Today, I will be taking you around my kitchen and showing you how I prepared a simple, yet absolutely delicious *Omelette Egg Veggie Sandwich toasted with my frying pan with that flavourful, rustic and messy... the type of food that always brings out the memories of quick fast food bites, cosy kitchen made with love for your body and soul.

This kind of food is suitable and can effectively be taken at any time of the day because this delicacy I will be showing you brings together the crunching of freshly prepared vegetables, the richness of eggs and the satisfying bite of soft white toasted bread.

Below are the ingredients I used for myself alone.

• Two large eggs
• 2 small diced carrots
• 2 grains of diced green beans
• small chopped onions
• half teaspoon of grounded pepper
• ⅕ or a pinch of salt
• a pinch of grounded dried Maggi
• 2 tablespoons of vegetable oil
• a pinch of curry powder
• 1 medium soft white bread
• frying pan

1. How I started

I started by washing all the fresh ingredients, prepping all and dicing the green beans and carrots into fine tiny pieces.
I ground the onion
I cracked the two eggs into a small bowl, poured the diced ingredients then gently mixed them with a fork.

2. Adding the seasonings

I added a pinch of salt, Maggi, curry, and dried ground pepper together with the diced carrots and green beans, then I gently mixed them together until it was evenly mixed.

3. Frying of the omelette egg

I poured the two tablespoons of vegetable oil into the already-hearted frying pan on low heat. After the oil was hot, I poured the mixture of the eggs and veggies into the pan. Without stirring, I allowed it to cook for like a minute until the veggies were locked inside the egg. I flipped it over with a spatula and then allowed it to cook until it was golden brown.

4. I assembled my already maxed sandwich

I spilt the bread open with a clean knife without cutting it through completely. I assembled by omelette according to the bread.

5. Toasting the sandwich

On a very low heat, I placed the bread into the frying pan and compressed it with the frying pan cover. Left it until it was golden brown then I flipped it to the other side and did the same.

6. I assembled my Sandwich

Take your soft bread roll and gently open it up, creating a pocket without cutting it all the way through.
Spoon the hot scrambled egg and veggie mix into the bread, stuffing it nicely.

7. Final Touch

I served the sandwich hot on my plate and allowed it to cool for like two to three minutes before giving it a bite and lo and behold, it gave that flavourful, rustic mess of fluffy eggs taste. I flushed it down with a chilled Hollandia yoghurt
Simple, sweet, affordable, hearty — and totally enjoyable.

Note: if you have cheese or butter available, you can spread it inside and outside the bread to give that creamy look after toasting.
