Just like many countries, eggplant and potato are commonly used to prepare various dishes. Today, I am making a delicious fry with a combination of eggplant and potato in a unique way, and I’m excited to share it with you all. The combination of eggplant and potato is simple yet tasty, and blending the flavors of potato with eggplant creates a wonderful dish. Adding wild dry sprats to this recipe further enhances its nutritional value. This dish can be quickly prepared and enjoyed either as a main meal or as a snack. It is perfect for any occasion. Now, let’s see how to prepare it.

Required Ingredients...

🍀 eggplant 200g.
🍀 2 potatoes.
🍀 Curry leaves.
🍀 A little chopped onion.
🍀 3 to 4 cloves of garlic
🍀 1/2 chopped tomato
🍀 A piece of cinnamon..
🍀 dry sprats 30g.
🍀 1 teaspoon crushed chili powder.
🍀 1 teaspoon chili powder.
🍀 1/2 Teaspoon of turmeric powder.
🍀 Coconut oil for frying
🍀 1/4 cup of coconut milk.
🍀 3 or 4 chili peppers.

Method of making....

1 Step.
First, wash and clean the eggplant, potatoes, and other ingredients thoroughly. Then, cut the potatoes and eggplant as shown below. Along with that, chop some onions, tomatoes, and a few small green chilies.

2 Step.
Next, take a pan and add some coconut oil. Once the oil is heated, fry the sweet potato pieces, dry sprats, and eggplant until they turn golden brown.

3 Step.
Next, remove the old oil from the pan and add about two tablespoons of fresh oil. Once heated, add some chopped garlic and sauté until fragrant. Then, add salt, chopped green chilies, tomatoes, and curry leaves, allowing them to fry well. After that, mix in chili powder, turmeric powder, and a little salt, stirring everything together.

4 Step.
Next, add the fried eggplant, sweet potatoes, and dry sprats to the pan and mix well. Then, pour in a little coconut milk and let it cook for about 2-3 minutes. Finally, remove it from the heat and serve.
