Oh you don't even need bay leaves babe!!!! Or even pepper. Just the onions will work. Or you can add thyme, or maybe even dill? Let us know how they go. Super easy!
You make toasties in an oven??? Whaaat!
So butter two slices of bread, still em together butter side toward each other. Then put on your toppings. Heat a frying pan to mid heat. Add the bread with toppings butter side down and put the other bread butters ide up. Put lid on. About 4 mins each side. Squish down with spatula as you go.

I'd go with Conquistador personally. Toasted Cheese has a seriousness that sandwiches lacks, I think. Anyway, just wanted to drop by and say thank you! Tried them last night - what a delight. Seriously, it got me wondering why we bother with anything other than pan-fried bread xD
