Fortunately, I had all the ingredients at home. The recipe has several steps, so you have to take your time, as both the mashed potatoes, which form the base of the dish, and the ground beef, which is the filling, need to be at room temperature. The result was very good, it was delicious, and it made for a light and nutritious lunch.
Ingredients
- 4 slices of whole wheat bread
- 400 g potatoes
- 165 g ground beef
- 90 g finely chopped seasonings (red pepper, sweet chili pepper, and green onion)
- 70 g sweet corn
- 1 egg
- 1 clove garlic
- 2 tablespoons breadcrumbs
- 2 heaping tablespoons wheat flour
- 1/2 cup heavy cream
- Wheat flour (as needed)
- Mozzarella cheese to taste
- 1 teaspoon sweet paprika
- Salt to taste
- 3 tablespoons oil for frying

Preparation
1.- Cook the potatoes. Heat enough water in a pot, then peel the potatoes, wash them, and cut them into cubes. Add the potatoes to the pot and boil until tender. Drain the water.




2.- Using a potato masher, mash the potatoes and leave to cool at room temperature.

3.-. While the mashed potatoes cool, prepare the ground beef. Peel the garlic and chop it into small pieces. Then, in a pot, place the ground beef, the chopped seasonings, and the garlic.


4.- Season the meat with salt to taste and paprika. Add 1/3 cup of water and cook the ground beef over medium-low heat. Adjust the salt to taste. Turn off the heat and let cool to room temperature.



5.- Prepare the base for the potatoes that will be stuffed. Add the egg to the mashed potatoes, which should be at room temperature, and mix well so that the ingredients are thoroughly combined. Then add the wheat flour and mix again.


6.- Prepare the stuffed potatoes. Dust your hands with wheat flour to handle the potato dough (as needed). Shape the dough into a ball and make a small hole in the middle. Place a portion of ground beef in the hole. Close the dough and coat it with breadcrumbs. Repeat the process until all the potato mixture is used up.

7.- Heat the oil in a frying pan and carefully add the potatoes. Brown on both sides.

7.- Prepare the cream, cook it with salt to taste until it thickens. Then add the corn and mix.

We serve. We pour the cream over the potatoes and grate mozzarella cheese on top.
