Qurator's: ¡Hive Top Chef! | TV Snacks | Stuffed eggs and shrimp and mozzarella pastries

Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: ¡Hive Top Chef! | TV Snacks. There’s nothing better than having some light snacks to munch on while watching our favorite TV shows. The idea is to have snacks that are light, simple, and easy to prepare—ones that don’t require utensils to eat—but above all, ones that are delicious.


With Holy Week coming up, fish and seafood are on the menu these days, so I used canned tuna and some shrimp as ingredients for my TV snacks. I bought some ready-made pastry dough to make pastries, which I filled with mozzarella cheese and sautéed, chopped shrimp. I also made some stuffed eggs; the filling was made with tuna, cooked egg yolks, mayonnaise, and salt. The white part of the eggs (the cooked egg whites) was stuffed with this mixture, so they served as little cookies.

Ingredients


- 4 sheets of ready-to-use pastry dough for pastries
- 5 shrimp, cleaned and shelled
- 50 g canned tuna
- 2 slices of artisanal mozzarella cheese
- 3 eggs
- 1 tablespoon mayonnaise
- Soybean oil for frying (as needed)
- 1 tablespoon olive oil
- Salt and pepper to taste

Preparation


1.- Boil the eggs in a pot with enough water for 12 minutes over medium heat. Once the time is up, turn off the heat and let the eggs cool to room temperature.

2.- Cut the shrimp into small pieces, then season them with salt and pepper .

3.- In a skillet over medium-low heat, add a tablespoon of extra-virgin olive oil and sauté the shrimp until they turn pink all over.

4.-. Assemble the pastries. For each round of prepared dough, place some chopped mozzarella cheese in the center, followed by the shrimp. Fold the dough over. Don’t use too much filling to prevent the dough from tearing. Using a fork, seal the edges on both sides. I apologize for the photo of the filling—it didn’t turn out well when I added the shrimp. Then, in a skillet over medium-low heat, add soybean oil and fry the pastries until they’re golden brown on both sides. Once ready, place them on a plate lined with paper towels.

5.-. Peel the eggs, slice the whites, and carefully separate the cooked yolks, placing them in a bowl.

6.-. Prepare the filling for the eggs. Add the tuna, mayonnaise, and salt to taste to the egg yolks, and mix well until the ingredients are thoroughly combined.

7.-. Fill the eggs with the filling and serve the dish, ready to enjoy while watching TV.
