A simple snack for lunch

Wet cassava flakes known as "Akpu mmiri" or "Abacha mmiri" is commonly known among the southeast region, mostly especially the ibos. Some see it as snacks while others see it as food. It is easy to prepare and doesn't take much time, it only demand that you soak it overnight for fermentation before it can be consumed.

It takes just the harvested cassava from the farm to make this snacks/food.

**Ingredients in making akpu mmiri"

  • 1kg of cassava
  • 1/2 table spoon of salt (optional)

First step
I took my time to peel the cassava, though some do not like peeling it, they just wash it before taking the next step.

Second step
After the first step which was the peeling process i washed them thoroughly and put them inside my pot, then cook for fifteen minutes.

Third step
After cooking for that specified time, i brought it down, allow it to cool off and then start cutting it into the sizes of my choice that i want.

After this, I washed and soaked it in the water over night for it to farment well, so it won't give any health challenge.

Fourth step
The next day, i washed it well and at this stage now now it's ready for consumption. While some eat it with fried groundnut others do it with coconut or just by sprinkling salt on it.

Here my wet cassava flakes is ready. It's mostly eaten during the hot weather while some others do not mind eating at any time.
