My delicious ugba sauce with yam

Hello vegan lovers welcome to the weekend and new month. I want to share my quick and easy ugba sauce with yam recipe for the ongoing #qurator weekly cooking contest.

This was an easy to make and delicious meal for the family dinner. The ugba also know as african oil bean seed is a traditional plant recipe that is a rich source of protein. It is eaten as a delicacy and also used in flavouring soups and other meals.

It is used in different parts of Nigeria and called different names in one region to another. So I decided to use it for a quick sauce to be eaten with yam. One can also eat it with potatoes or rice.

Here are the ingredients used

1 medium sized tuber of yam

A small bowl of ugba( African oil bean)

2 large onions

1 gram of scotch bonnet pepper

Some scent leaves

A table spoon of salt

2 seasoning cubes

3 cooking spoon of palm oil

Preparation

Cut and peel the yams. Cut into chunks, wash and put on fire after adding some salt to cook for 15 mins

Wash and blend the peppers

Chop the onions

Wash the ugba

Pick and chop the scent leaves

To cook pour 3 cooking spoon of palm oil and add some onions

Put in the blended peppers and let it saute for a 5 mins till the water dries up then put in the salt and seasoning cubes

Add the ugba and stir. Leave to cook for another 3 minutes

Add the chopped scent leaves and leave it for 1 minute and its ready

Strain out the water from the yams and serve with the sauce

This was quick and easy to prepare, it also tasted so good. Try it and thank me later.
