Good Morning, Afternoon or Evening to all the food lovers of @Hive and welcome to my blog. In this blog I will show you a traditional manufacturing of jaggery from fresh sugarcane juice and it's consumption benefits for our health. Last weak I went to my village and one of my neighbors was manufacturing jaggery in a traditional way I stopped there for two hours to learn the whole process and took some pictures to show you guys.As shown below:
Let's Start:
"Jaggery is sweet in taste, and it is manufactured from extracted sugarcane juice".
Jaggery manufacturing process consists on different steps.
This picture is just for overview, now I will show you step by step procedure of traditional jaggery munufacutration.
In order to prepare jaggery my neighbor brought some properly cleaned sugarcanes from sugarcane crop.
As a properly cleaned sugarcanes are shown below.
(1). Way to Extract Juice:
In order to get juice from the sugarcanes, he was using a crushing machine, this crushing machine consists on three crushing rollers which runs on electricity. Each sugarcane is crushed one by one to extract a juice,and that juice is collected in gallons. Then this extracted juice is filtered by using pice of cloth.As a sugarcane crushing machine is shown below:
(2). Cleaning Of Sugarcane Juice:
After extraction of juice he infused that sugarcane juice gallon in a big pan which is heated on furnace, as the temperature of juice starts rising upto 90 degree the unwanted particles and other impurities starts coming on the top of juice by making a foam type layer on the top and this layer is removed, after removing that layer juice starts getting concentrated gradually as shown below:
(3). Boiling For Concentration :
After removing all the involved impurities sugarcane juice is boiled almost 1 hour on a medium flame to make it more concentrated so that the juice can look like a paste and it will starts looking yellow colour.As shown below:
(4). Solidification of Paste:
When juice looks like a creamy Or paste the it is transferred into a square type pot to for cooling and solidification, as shown:
(5). Cutting into required pieces:
UpTo this step jaggery is almost ready now all we need to cut it in to required shapes or or pieces, after cutting into pieces we will let the pieces to get dried properly and after drying the jaggery (gur) is ready for consumption.

Conclusion:
Purely manufactured jaggery consumption is thousands time better than refined sugar for our health. It is beneficial for our digestive system,liver and prevents us many diseases, and it promotes our traditional recipes of ancient time.In short jaggery production process experience was like an adventure for me.
