Best of luck to whatever you are busy doing, whether it is work chores or just taking time to rest. For today i just want to share something simple yet truly comforting our snacks for this afternoon. These are Binangkal with a special twist because i filled them with Ube. And let me tell you they turned out amazingly good..

For those who might not be familiar with it Binangkal is a well loved snack here in the Philippines especially in Visayas and Mindanao. It is basically deep fried dough coated in sesame seeds. Traditionally it is a bit crunchy on the outside and slightly dense inside. Many people enjoy it with coffee or hot chocolate especially in the morning or afternoon merienda.. It is one of those snacks that remind us of home of simple days and of the warmth of Filipino hospitality.

But today i wanted to make something a little more special so i filled them with ube halaya. Ube has always been a favorite flavor for many of us here. It has a natural sweetness and a beautiful purple color that makes any food look extra appetizing. When combined with the crunchy sesame coating of binangkal the result is a perfect balance of texture and flavor. Crunchy on the outside soft and flavorful inside. Every bite feels satisfying and comforting..

The preparation was actually fun. I started by making the dough, which is usually a mixture of flour sugar baking powder and a little bit of oil or butter. Then i formed them into small balls and placed a small amount of ube filling inside. After sealing them carefully i rolled the balls into sesame seeds. The smell of toasted sesame while frying made the kitchen feel warm and inviting. It is the kind of aroma that makes everyone ask “What are you cooking? It smells so good”

When they were finally done we could not resist trying them right away. The first bite was a surprise even though i already knew there was ube inside. The crunchy sesame coating made a nice contrast with the soft sweetness of the halaya. These small golden balls were truly worth the effort. Even just looking at them with their golden brown color and little spots of purple peeking out already makes you hungry..

This snack may look simple but it brought so much joy to our afternoon. Food really has a way of making moments special. Sometimes happiness comes in small bites and warm kitchens.
