En vista de esta fecha tan hermosa como lo es la navidad, lleno de tradiciones culinarias que caracterizan nuestro país, hoy les quiero compartir mi receta de hallacas vegetarianas, de verdad son tan buenas al paladar como las tradicionales de carne de cochino, gallina, pollo, entre otros.

De verdad son demasiado buenas, y sanas, una gran opción para aquellas personas que no pueden comer carne o que prefieren los vegetales, yo amo los vegetales y este año me provoco hacer unas pocas para mí y matar el antojo, ja ja ja.

INGREDIENTES

1 Tallo de cebollín
1 Tallo de ajo porro
Ajo al gusto
4 Ajíes
Aceitunas
Pasas
Harina de maíz pre cocida
Hojas para Hallacas
Aceite onotado
Salsa inglesa
Sal, Pimienta
Pabilo
1 coliflor pequeño
1 zanahoria
1Papa grande
1 Pimentón

>INGREDIENTS

1 stalk of chives
1 garlic stalk
Garlic to taste
4 chili peppers
Olives
Capers
Raisins
Pre-cooked corn flour
Sheets for Hallacas
Onotado oil
Worcestershire sauce
Salt, Pepper
Wick
1 small cauliflower
1 carrot
1 large potato
1 paprika

PREPARACION PASO A PASO
>PREPARATION STEP BY STEP

-Lave todos los vegetales, los pique, pele la zanahoria, la papa, las corte en cuadritos pequeños, también el coliflor.

-Wash all the vegetables, chop them, peel the carrot, the potato, cut them in small squares, also the cauliflower.

-En una sartén puse suficiente aceite onotado (se prepara aceite con onoto en grano y se pone al fuego hasta desprender el color.) ya tenía preparado que me había quedado de las hallacas de la navidad.

En ese aceite, agregamos los aliños, el ajo triturado que se sofrían, le puse vino y un chorrito de agua para que fuera haciendo una pequeña salsa, le coloque alcaparras bien lavadas para bajarle la sal, pasitas, salsa inglesa, sal, paprika, pimienta.

-In a frying pan I put enough oil onotado (oil is prepared with onoto grain and put on the fire until the color is released.) I had already prepared that I had left from the hallacas of Christmas.

In that oil, add the seasonings, the crushed garlic to fry, I put wine and a splash of water to make a small sauce, I put well washed capers to lower the salt, raisins, Worcestershire sauce, salt, paprika, pepper.

-Luego incorpore la zanahoria que es la más dura, cuando y este al dente, agregamos la papa y el coliflor que son más suave, tapamos a fuego bajo para que se mezclen los sabores y que este todo blandito, le agregue más vino, rectifique, los demás condimentos y a esperar que esté listo.

-Then add the carrot which is the hardest, when it is al dente, add the potato and cauliflower which are softer, cover over low heat so that the flavors mix and everything is soft, add more wine, rectify, the other seasonings and wait for it to be ready.

-Mientras, voy preparando la masa para tenerla lista y comenzar a armar mis hallacas vegetarianas.

En un envase coloque la harina de maíz amarillo (3 tazas aprox.), un chorrito de onoto para darle más color, al agua le disolví medio cubito para darle más gustico y sal al gusto, amase hasta que se formara una masa homogénea y muy suave.

-Meanwhile, I am preparing the dough to have it ready and begin to assemble my vegetarian hallacas.

In a container place the yellow corn flour (3 cups approx.), a dash of onoto to give it more color, I dissolved half a cube of water to give it more gustico and salt to taste, knead until a homogeneous and very soft dough is formed.

-Mi guiso ya está listo y reposado, ahora a armar:

Ya las hojas estaban lavadas, la engrase con el aceite onotado tome una pequeña porción de masa y la extendí en la hoja finamente. Le coloque dos cucharadas grandes de guiso, para adornar le coloque aceituna, alcaparra, pasitas, tirillas de pimentón, cebolla. Tome los dos extremos de la hoja y las uní, doblando hacia abajo y las dos puntas también hacia abajo y amarre bien asegurando.

-Puse agua a calentar, le agregue una cdta. de sal, cuando comenzó a hervir agregue las hallacas durante 20 min y ya están listas. A degustar¡¡, hummm…
