Beef? No!
It is pigar- pigar.
But it is beef.

Last weekend, my cousin gave us a few chunks of beef. I rarely eat beef meals but this time, I was forced to. To my cousin, thanks anyway for the meat.😁

One famous beef recipe here in our locality is Bulalo or beef stew, boiled for hours and mixed with vegetables like potatoes, cabbage and sweet maize.

But this time, I thought of cooking Pigar- pigar.

Pigar-pigar is a famous, if not staple, viand or pulutan in Pangasinan.

It is made from thinly cut beef meat, fried in boiling hot cooking oil then mixed with chopped cabbage and onions or just onions.

I've never eaten nor cooked pigar-pigar before so I tried preparing it.


How to prepare:

First, chop the beef meat in thin strips. Cut the cabbage in squares or strips. Chop the onions as well. Use white onions.

Next, marinate the beef with soy sauce and kalamansi juice. You may also add some liquid seasoning and black pepper powder depending on your preferred taste.

Then, heat pan and add cooking oil. Oil must be enough to deep fry the beef.

Once hot, add the marinated beef strips. Fry for around five to ten minutes, just enough not to make it crispy. Stir from time to time to make sure the beef is cooked evenly.

After five to ten minutes, add sliced cabbage and onions. Mix thoroughly just enough to half cook the cabbage and onions. Then scoop it to drain from the oil using a stainless steel strainer.

Transfer to a serving plate.

Prepare chili sauce dip. I just usually grind chilis, add kalamansi juice and soy sauce.

Serve.

Voila! Enjoy your pigar-pigar!
