As a home baker, my cookie tins were seldom empty when my kids were growing up; always looking for something to nibble on between schoolwork, sports, and playtime.
Back then, kids still played outdoors till the sun went down.
Unlike today, where most kids are glued to electronic devices, right, or wrong?
Just saying...
When the kids fled the nest, the cookie tins sometimes remained empty. Hubby was a diabetic, and I did not want to put too much temptation on the tea table.
The recipe I'm sharing with you today is called Thimble Cookies; some call them Thumbprint Cookies. This cookie dough does not contain much sugar, and when hubby was still here, I used diabetic jam, as he loved having a sweet treat every so often.
Thimble Cookies are rolled in crushed Cornflakes, with a jam-filled centre. The Cornflakes makes them super-crunchy, and the little jam in the centre is the bonus!
This versatile cookie dough requires very basic ingredients and can have variations on the theme.
One can add chocolate chips to the dough and make Choc Chip Cookies, or roll the little balls of dough into sprinkles of all kinds.
