Easy & Favorite Veg Egg Noodles 🥕🍜🥚 | Simple Homemade Snack

Today I made noodles for afternoon snacks. I prepared them using eggs and different kinds of vegetables. I really love eating noodles. I actually prefer handmade noodles more, but due to time constraints and lack of motivation to make them from scratch, I used Doodles brand noodles this time. I prefer stick noodles the most, because after boiling other types of noodles, I often notice oil coming out. I feel those noodles are not very healthy, so I always use stick noodles.

I enjoy eating noodles a lot, and I also love creamy pasta. However, noodles made with eggs and vegetables are not cooked very often. This combination tasted really good. When you use vegetables of different colors, the noodles look very colorful and attractive. Children especially like colorful food. This can be a great trick to make kids eat vegetables. If a child doesn’t like vegetables, you can mix different vegetables with eggs and prepare colorful noodles like this, or pack it for their tiffin. Kids love colorful food, and in the winter season we get many varieties of vegetables easily.

Today I will share how I cook vegetable noodles.
Ingredients:
1 packet noodles
Egg
1 packet Maggi masala
Salt
Chopped carrot
Chopped spring onion
Chopped onion
Chopped green chili
Oil
Cooking Method:

First, I took a pot, added water and a little salt, and put it on the stove. When the water started boiling, I added one packet of stick noodles to the hot water. I waited until the noodles were cooked. When they were about 95% cooked, I removed them from the water, washed them with cold water, and drained them well.

Many people use oil while boiling noodles, but I never do. If you cook them up to 95%, they become perfectly separated, so there is no need to add extra oil.
Next, I chopped all the vegetables into small pieces. I chopped onion and green chili, and as vegetables I used carrot and spring onion. These vegetables enhance the taste of the noodles and also make them look colorful with orange and green shades.

I sautéed all the vegetables together lightly, not overcooking them—just until they were slightly browned. I added a small amount of salt according to the vegetables. I do not add all the salt at once because that can make the vegetables too salty and the noodles bland. I added salt in three stages.

After the vegetables were cooked, I pushed them aside in the pan and cracked one egg into it. I added a little noodle masala and a pinch of salt to the egg and scrambled it well. When the egg was cooked properly, I mixed it with the vegetables.

Then I added all the boiled noodles. I mixed everything well and added the remaining noodle masala at this stage. This masala is usually used for vegetables, but I use it for noodles. Finally, I added a little more salt and stir-fried everything nicely.

Our vegetable noodles are now ready. 🍜
This is a very easy snack and loved by both kids and adults. By making noodles this way, you can easily feed vegetables to children, and everyone really enjoys this recipe. I personally love eggs, so I also made a fried egg on the side and decorated the dish beautifully with carrots.
