Hello friends, how are you finishing up this week? Christmas is just around the corner, and today I'm sharing a delicious and nutritious vegetable salad with boiled eggs.
Hola amigos como están finalizando esta semana? Queda muy poco para celebrar navidades, hoy les comparto una rica y nutritiva ensalada de vegetales con huevos cocidos.
🥗 Ingredients:
2 hard-boiled eggs.
1 piece of cabbage.
1 cooked beet.
1/4 of a white onion.
1/2 a carrot.
A few sprigs of cilantro.
Salt and pepper to taste.
Oil as needed.
Juice of one lemon.
1 pinch of mustard.
1 teaspoon of mayonnaise.
🥗 Ingredientes:
2 huevos cocidos.
1 trozo de repollo.
1 remolacha cocinada.
1/4 de cebolla 🧅 blanca.
1/2 zanahoria.
Unas ramas de cilantro.
Sal y pimienta al gusto.
Aceite el necesario.
Jugo de un limón.
1 pizca de mostaza.
1 cucharadita de mayonesa.
🥗 Preparation:
Shred the cabbage as finely as possible and place it in water with vinegar to disinfect it.
Grate the carrot and beet, slice the onion into julienne strips, and finely chop the cilantro. Quarter the eggs. For the dressing, mix oil, pepper, mustard, mayonnaise, and lemon juice. Mix well to emulsify.
In a bowl, combine all the chopped vegetables, add salt and pepper, and mix well until incorporated. Then prepare the dressing, add it to the salad, and mix again. Place it on a plate and add the quartered eggs.

🥗 Preparación:
Cortamos el repollo lo más fino posible y lo colocamos en agua con vinagre para desinfectarlo.
Rallamos la zanahoria y la remolacha, la cebolla la cortamos en julianas y el cilantro lo cortamos pequeño, los huevos los cortamos en cuartos, para la salsa mezclamos aceite, pimienta, mostaza, mayonesa y el jugo de limón, mezclamos bien para emulsionar.
En una fuente mezclamos todos los vegetales cortados, agregamos sal y pimienta y meszclamos bien hasta que estén integrados, luego preparamos la salsa y la colocamos y volvemos a mezclar, la colocamos en un plato y agregamos los huevos cortados en cuartos.
