Hello my friends, happy day, I hope you are doing well, today I am joining the contest proposed by the team at Qurator's: Hive Top Chef! | Chicken Thighs in which we have to prepare a dish with a special ingredient, for this week we have to work with chicken thighs, coincidentally yesterday my lunch was some delicious chicken thighs baked with vegetables, chicken thighs add a lot of flavor to all meals, especially chicken rice, soup, stew, I learned that from my grandmother haha, so at home, they are not missing, besides we all love them, now we go with the recipe for this delicious dish.
Delicious Chicken Thighs, baked with vegetables.

Ingredients:

3 chicken thighs.
1 onion, half a red pepper, a sprig of celery, leek, 5 sweet peppers.
1 carrot, half a zucchini, an ear of corn.
1 cup of vegetable broth, or chicken broth.
To season the chicken, use garlic, spices, paprika powder, curry, salt and pepper, all to taste.
Olive oil.
Process:
1- Once we have the thighs seasoned, we put them in the fridge, while we cut all the vegetables into thin, long strips. We are only going to cut the zucchini into slices, and we are going to shell the corn. If you have canned corn, that also works.




2- Once we have all the vegetables cut, in a glass baking tray, previously greased with a little olive oil, we add all the vegetables, then place the chicken thighs, and then the broth.



3- Next, cover the tray with aluminum foil, and put it in the oven, preheated for 40 min - 1 hour, at this point remove the aluminum foil, and let it cook for 40 more minutes, or until the chicken is golden brown, if necessary, you should turn the chicken over. thighs, so that they brown on both sides, after the time has elapsed, remove from the oven.

4- We serve our chicken with the side dish that we like the most, in my case I served it with rice and vegetables, which give this dish a special touch. The flavor of the vegetables is crazy, and the chicken is super juicy and exquisite.
