Chicken Inasal: No Complete Ingredients? No Problem!

Hi everyone! 💛

‎For tonight’s dinner, I decided to cook Chicken Inasal.

‎It’s a grilled chicken dish that is famous for its delicious and savory flavor.

‎But here is the thing… I didn’t have all the complete and right ingredients for the marinade! 😅

‎I was short on a few key things that usually make it taste authentic.

‎But since I was already craving it, I just cooked it anyway. I just work with whatever I have available in my kitchen.

Ingredients:

‎• 2 chicken leg quarters
‎• 1/4 cup soy sauce
‎• 2 tbsp banana ketchup
‎• 2 tbsp brown sugar
‎• 5 cloves garlic, minced
‎• 1 thumb-sized ginger, minced
‎• 1/2 tsp black pepper
‎• 1 tbsp cooking oil

Let's cook!

‎I started by mixing all the marinade ingredients together in a bowl, with the chicken legs right in. I made sure to coat every piece really well. Now… Chicken Inasal should be marinated for at least 24 hours to get that deep, rich taste. But I only let it sit for a few minutes before cooking. Haha.

‎When it was time to cook, I used our multi-cooker and set it to medium heat. I also poured in a small amount of cooking oil to keep it from sticking and to add a little extra richness. I placed the chicken pieces inside and let them cook slowly. I flipped them over from time to time until both sides looked nice and had that lovely golden color.

‎Once both sides were a bit cooked, I poured in the remaining marinade sauce right into the pot. I let it simmer and baste the chicken until the sauce reduced a bit and until I was sure the meat was fully cooked inside and tender.

‎It was just a simple way to do it. And even with the short marinating time, the flavor really soaked in.

‎It's just what I noticed after tasting, the two main things missing from my marinade. It was the kalamansi and Sprite! I really felt their absence because those two what balances the saltiness of the soy sauce. Without them, the taste was a bit heavier, but it still tasted okay and we enjoyed it anyway!

‎Also, have a look at the color… it turned out a little bit darker than I expected. 😂 Maybe it was because I used too much soy sauce, or maybe I overcooked it a little bit? Hahaha!

Oh well, it may not look perfect or have the exact authentic taste, but it still satisfied my craving. ❤️
