
There was a time when we went through a whole week of not having enough food at home. It felt scary opening the pantry and seeing almost nothing left.
Since then, I've learned to plan our meals, like how to stretch them, but still taste good.
That's how fritters became one of my favorite "go-to" recipes.
They're simple, budget-friendly, and you can turn almost anything into them... vegetables, leftovers, or whatever is available.
Recently, I used corned beef and potatoes.
So that's what I will share with you today.
Ingredients:

• 1 can corned beef (150 g/5.3 oz)
• 1 medium potato
• 1/3 cup all-purpose flour
• 1 small onion
• 1 clove garlic
• 1 egg
• 1/4 tsp ground black pepper
• salt to taste
• oil for frying
Steps:

• I started by heating oil in the pan, and dropped the cubed potatoes. I fry them first to let them soften and turn slightly golden.

• After that, I transferred the potatoes into a bowl, and one by one, I added everything from the ingredients list... the corned beef, seasonings, and the rest of the mix-ins. Of course not the oil. 😅 That part waits for the frying pan.

• I mix everything together. Making sure it was evenly combined.

• Next, I heated the same pan and oil I used earlier for the potatoes. Then took about two tablespoons of the fritter batter and put it into the pan.
Tips: Make sure to give each enough space to fry properly.

• I kept an eye on the edges. When they started to turn golden brown, it was time to flip them. I use a spatula and spoon to turn it over, to avoid breaking them apart.
And here's the result...


You can also add grated cheese inside to make it creamy. 🤤
And serve it with vinegar dip instead of ketchup.
This recipe is so affordable, filling, and easy to stretch when the pantry feels a little empty.
And most importantly, my kids enjoy this!
