
Hello everyone, I'm back in the kitchen today. Lately, I've been cooking my own meals because I love the flavors and can choose my own ingredients. Today, I'm making pickled bamboo shoot curry. I was craving this dish, so I checked my ingredients and found some beef. I also remembered I had some young chicken eggs in the refrigerator, and pickled bamboo shoot curry would go well with them. Let me tell you, this dish is incredibly delicious! However, some people might not like young chicken eggs because they've never seen them before, but in Thailand, they're often used in dishes like Tom Yum or pickled bamboo shoot curry. Let's look at the ingredients and how to make it.

Ingredients
- 5-10 thinly sliced beef brisket
- 5-7 young chicken eggs
- 100 grams of pickled bamboo shoots
- One tablespoon of red curry paste
- One shallot
- Lemon Basil leaves
- Kaffir lime leaves
- Green onions
- 1 teaspoon of fish sauce
- 1 teaspoon of seasoning powder
- 1 teaspoon of fermented fish sauce
- 400 ml of water

Instructions
- Sauté the red curry paste and beef without oil. Add a little water to prevent sticking. Then add the shallot and sauté until well combined. - Sauté the vegetables until the meat is almost cooked, then season with seasoning powder, fish sauce, and fermented fish sauce.


- Once the meat is almost cooked, add water to create enough broth to dissolve the curry paste without burning. Then add the washed and prepared soft-boiled eggs and bring to a boil. Add kaffir lime leaves for aroma.


- Once everything is cooked, add the washed pickled bamboo shoots to the pot. Stir briefly, cover, and let it simmer to allow the pickled bamboo shoots to release their sourness into the broth.


- Once everything is well combined, add the chopped green onions (I used young green onions) and dried basil (fresh basil is better if available).

- Stir everything together, taste, and serve. The resulting flavor will be sour, salty, and spicy; it's a strong, not bland, flavor because the curry paste and kaffir lime leaves add a wonderful aroma. This dish is delicious with hot steamed rice.
