Fettuccine Alfredo Pasta
Hi Hivers, what are you cooking for the night? I have made this dish so many times, and it never fails me. It is creamy, comforting, and surprisingly easy to make. You do not need any fancy cooking skills. Just a few basic ingredients and about 20 minutes.

Ingredients:
For the pasta:

  • 200 grams of fettuccine (half a box, basically) and Salt for the water

For the sauce:

  • 4 tablespoons of butter (unsalted works best)
  • 1 cup of heavy cream
  • 1 cup of Parmesan cheese, freshly grated, or any cheese slices work
  • Black pepper to taste

Optional extras:

  • Fresh parsley for garnish
  • Extra Parmesan for topping
  • Mushrooms as an Add-On

Recipe

Step 1: Cook the Pasta

Fill a large pot with water and put it on high heat. Once it starts boiling, add a good pinch of salt. Not too little—the water should taste salty.

Then drop the fettuccine in and give it a quick stir so the noodles do not stick together. I cook it for about 10 to 12 minutes, or whatever the package says. I like it a bit chewy.

Scoop out about half a cup of that starchy pasta water and keep it aside. This is important. It helps the sauce later.

Then drain the pasta in a colander. And rinse it so it does not stick together.

Step 2: Make the Sauce

While the pasta is cooking, I start the sauce. I use a large pan so there is enough space to toss everything later.

I put the pan on medium heat and add the 4 tablespoons of butter. I let it melt slowly.

Once the butter is melted, I pour in the heavy cream. I stir it and let it warm up for about 2 to 3 minutes. I watch for small bubbles around the edges—that is my sign it is ready. I never let it boil hard.

Step 3: Add the Cheese

Now I turn the heat down to low. This is very important. High heat will mess up the cheese.

I add the Parmesan cheese slowly, a little at a time, while stirring.

Once all the cheese is in, I add some black pepper. I taste it before adding any salt because Parmesan is already salty. Most of the time, I do not need extra salt.

Step 4: Mix Everything

Now I add the cooked pasta right into the pan with the sauce. I use tongs to toss it all together. I make sure every noodle is coated.

If the sauce looks too thick, I add a little of the pasta water I saved earlier. I add it slowly until everything looks smooth and creamy.

I toss for about a minute or two on low heat. This lets the pasta soak up some of that sauce.

Step 5: Serve

I turn off the heat and plate the pasta. Sometimes I sprinkle some parsley on top if I have it. A little extra Parmesan and a crack of black pepper never hurt either.
You can also stake some chicken to serve with it.
Toasted garlic bread also goes well with it.

I serve it right away. Alfredo is always best when it is hot and fresh.

Final Thoughts

This is one of those recipes that feels special but is actually very simple. I make it when I want something comforting without spending hours in the kitchen.
