In Palembang or South Sumatra has many types of chili sauce, one of which is pineapple chili sauce. This typical Palembang pineapple chili is processed ripe pineapple cooked with a mixture of chili ingredients in the form of red chili, onions and also palm sugar as a creator of spicy, sweet, fresh, delicious flavors.
It's simple but this chili sauce is very tasty and can be enjoyed with any food including bread. But in Palembang itself pineapple chili sauce is enjoyed as a complementary dish, usually enjoyed with rice added green vegetables or tofu tempeh is very good.
Well curious not with the recipe, let's look at the following step by step preparation.
Ingredients Needed
4 red chili peppers
3 cayenne pepper
1 clove of garlic
3 cloves shallots
1 teaspoon sugar
¼ teaspoon salt
¼ teaspoon mushroom broth
10 grams palm sugar
Cooking Procedure
Chili, onion are all cut into small pieces and then mashed manually, adding sugar, salt and mushroom stock.
Cook or stir fry with one tablespoon of cooking oil. Add water then cook again until the water shrinks again.
Add palm sugar, then cut the pineapple into small pieces, so that it can be
enjoyed in the sauce.
If it has shrunk and the sauce starts to pop, I add the pineapple, cook for a while until the pineapple is cooked.
Result
Taraa!!!
The typical Palembang pineapple chili sauce is ready to be served, it tastes spicy, sweet, savory all in one. There is a little sourness from the pineapple, and one other thing because pineapple releases water so the chili is a bit liquid at the end. Maybe if you want a thicker sauce you can cook it a little longer when putting in the pineapple. But this is the risk that the pineapple will be crushed. Maybe you can outsmart it by cutting the pineapple bigger.
