
There are so many recipes that require cream cheese that I'd like to try. While it's convenient to just buy it here, I want to challenge myself by making my own cream cheese to use. I think there are many interesting advantages. The most obvious one is saving money – it's definitely cheaper than buying the ready-made version. It's fresh, clean, safe, and good for my health because my homemade version contains no preservatives or food additives, and no artificial flavors. The process is also very simple, and the recipe I use requires only two ingredients.

🥛 Ingredients
1 liter of fresh milk 🥛
2 tablespoons of lime juice 🍋🟩
🫕 Instructions

Heat the milk over medium heat, stirring continuously.

Once the milk is warm, add the lemon juice.

Continue stirring until the white curds separate from the clear liquid (whey). Turn off the heat.
Remark- If you don't have lime juice, you can use vinegar instead. Start with the same amount as lime juice. If the milk doesn't curdle, gradually add more vinegar until the milk curdles and separates from the liquid.

Strain the mixture through a cheesecloth, collecting only the white curds.
Blend the resulting cream cheese until smooth. If the mixture is too thick, add some of the clear whey and blend again.

Once done, transfer the cream cheese into a container, seal the lid, and refrigerate in the regular cooling compartment.
It can be stored for about 2-3 weeks or used immediately in cooking or baking.

By following these steps, you'll have homemade cream cheese ready to use in various dishes and desserts. It's easy to make and cost-effective!
Yield: 1 liter of milk yields approximately 200 grams of cream cheese.
