Hello hiveans hope all are fine.
Winter has knocked on the door.. and in every ones house will also start making gazar ka halwa.
Just hearing about gazar ka halwa makes mouth water.
Gazar ka halwa means Carrot pudding. It is an sweet Indian dessert. It is very delicious and popular dish in North India. Fresh Red Carrots, full fat creame milk, some cashews and nuts, cardamons and sugar.
Gajar ka halwa is often made in the house during winters. In winters fresh red carrots are in season. Even in buffet we will find this fish as a dessert.
So lets try to make Gajar Ka halwa..

INGREDIENTS
fresh grated carrots-1.5kg
Full fat milk-2kg
Cashews- 10
Sugar-1.2kg
Cardamom powder-½tspn
Ghee-250gm
METHOD
Wash , peel and grate the carrots.

Then heat a thick kadhai.

Add ghee.

The add grated carrots and roast them for 10 mins in low meduim flame. When the nice aroma will comes then add milk.



Stir it. We have to keep stiring the halwa to prevent burning at the bottom.


Cook until the milk evaporates by stiring continously

After the milk evaporate
Add sugar and stir again till the halwa becomes thick

Then add ghee once and stir well. Add Cardamom powder
Cook till halwa become thick.
The add nuts stir and off the flame
Garnish the halwa with more nuts and pistachios


Serve hot or chilled of your wish....
