Arroz Carreteiro Gaúcho is a beloved traditional Brazilian dish from Rio Grande do Sul. Known for its simplicity and robust flavors, this recipe combines lean beef and rice cooked in a fragrant tomato sauce. Ingredients

🥩 300g lean beef, Alcatra cut
🧅 1/2 large onion
🧄 2 cloves garlic
🧈 15g butter
🫒 10g olive oil
🌿 1 sprig thyme
🍅 150ml natural tomato sauce, homemade
🍚 1 cup rice
💧 2 cups water
🌿 Fresh parsley, quantity as desired
🧂 Salt, adjust for taste
🌶️ Black pepper, adjust for taste
🧀 Grated Parmesan Cheese, optional, Piraquê


Instructions

1- Prep the Ingredients:

  • Dice 300g of lean beef into small cubes
  • Mince 2 cloves of garlic and finely chop fresh parsley
  • Finely dice 1/2 large onion

2- Heat the Pan:

  • Set your Tramontina Portable Induction Cooktop to medium-high (level 80)
  • Place an iron pan on the cooktop and add 15g of butter and 10g of olive oil

3- Sauté Vegetables:

  • Once the butter melts and bubbles, add the diced onion, minced garlic, and thyme sprig
  • Sauté until the onion softens and becomes translucent

4- Cook the Beef:

  • Add the diced beef to the pan, seasoning generously with salt and black pepper
  • Let the meat brown without stirring too frequently to form a flavorful crust

5- Create the Sauce:

  • Remove the thyme sprig after browning the meat
  • Add 150ml natural tomato sauce and stir to "pinçar" (pincage), scraping the pan's bottom to incorporate caramelized bits

6- Toast the Rice:

  • Lower the heat, and add 1 cup of rice, stirring with the meat and sauce for about 30 seconds to absorb flavors

7- Simmer and Cook:

  • Pour in 2 cups of water, stir, and taste the broth to adjust salt as needed
  • Cover and cook until the rice absorbs all the liquid, achieving the preferred consistency

8- Finish and Serve:

  • Once the rice is cooked to your liking, garnish generously with chopped parsley before serving
  • For added richness, sprinkle with Piraquê grated Parmesan cheese if desired
