Wow! Indeed, healthy and delicious! I also cook soups, but most of the time, I do tempering, especially if it's not a sour soup. I'm amazed you didn't use oil here, it's healthier than tempering spices before adding water.

Also, I am fascinated by the variety of eggplant you used for this soup. I have seen them in pictures, but I have never eaten this variety before. After reading your post, I really want to try this kind of eggplant, because we only use the long, purple ones here. 😊 Thank you for sharing your cooking story. 💚
