I have made several creamy dishes, but this one is my absolute favorite!
It is quick & easy to make and very satisfying to eat. The sauce is flavorful and rich, yet not over the top. It can be served with anything. Best of all, it's a one-pan meal!
Garlic Parmesan Chicken
I had three chicken thighs, which I had deboned. The chicken is thinner and will cook fast and remain juicy when cooked.
I seasoned both sides of the chicken with salt, pepper, and paprika, making sure the seasoning was spread evenly.
Heat up a tablespoon of olive oil over medium to high heat. Then add the chicken. If you have chicken skin like I do, put the chicken skin down first.
While the chicken is cooking, mince the 4 to 5 cloves of fresh garlic.
When the chicken was golden brown on both sides, I transferred them to a holding plate and set it aside, not worrying that the chicken was fully cooked, because it would finish cooking in the sauce later.
Then I made the Garlic Parmesan Sauce.
It's a one-pan meal !
Using the same pan, I lowered the heat further. I added 3 tablespoons of butter to melt. After which, I stirred in the garlic and cooked it until fragrant for a few seconds.
Then, using a wooden spoon, I poured the 1 cup of chicken broth while scraping the pan.
I reduced the heat to low and added the 1/2 cup Heavy Cream, stirring constantly, followed by the 3/4 cup Parmesan Cheese, 1 teaspoon of Italian Seasoning, and Red Pepper Flakes. I let it simmer for 3 minutes until the sauce thickens.
When the sauce had thickened, I returned the chicken back into the skillet, making sure I added all the drippings. Then, spooning sauce over the top, I let it simmer until the chicken is fully cooked through, about 5 minutes. The sauce has thickened some, too!
It is perfect over pasta or mashed potatoes!
And/or serve it with vegetables.
