I usually prepare it in a very special way: I make the dough and sauce using fresh tomatoes, and I must say, it turns out delicious. For the cheese, I use queso blanco, which here in Venezuela we call queso llanero. This type of cheese is not only perfect for pizza, but it also gives it an exceptional flavor, especially when it's fresh. First, I'll start preparing the dough. To do this, I use 500 grams of flour, which is the ideal amount for one large pizza and one medium pizza, enough for four people. Although, depending on my family's appetite, sometimes it's enough for up to five. The flour I'm using is self-rising flour, so I don't need to add yeast. I place the flour in a large bowl and add a tablespoon of oil, a small tablespoon of sugar, and another small tablespoon of salt. Then, I add a cup of water. I start mixing all the ingredients with a teaspoon, making sure the flour absorbs the water well. After everything is well combined, I begin kneading the mixture. I do this for a minimum of five minutes, until the dough is smooth and elastic. Kneading is a crucial step, as it helps develop the gluten in the flour, which will give the dough a perfect texture for pizza. Once the dough is ready, I let it rest for a while to relax before rolling it out and shaping it. After the resting time has passed, it's time to work with the dough. On a previously greased baking sheet, I place the rolled-out dough, making sure it covers the entire surface well. To prevent bubbles from forming during baking, I use a fork to make several punctures in the dough. This step is essential, as it allows steam to escape and helps the pizza cook evenly.

Now that I have the dough ready and stretched out on the baking sheet, I let it rest a bit while I prepare the sauce. To do this, I start by washing the fresh tomatoes well, making sure they're clean and ready to use. Then, I chop them into several pieces and place them in the blender. I add a little water, just enough to blend them well, and I also add oregano to taste, which will give the sauce a delicious flavor. To further enhance the flavor, I add a garlic clove, which will add an aromatic and savory touch. I blend all the ingredients until I get a smooth mixture. After blending the ingredients, I heat a cauldron (or you can also use a frying pan) with a little oil, just enough to sauté a crushed garlic clove. This step is crucial, as the garlic will give the sauce a more intense and delicious flavor. Once the garlic begins to brown, I add the blended tomatoes to the mixture. Then, I season with a little salt to taste to enhance the flavors. I also add a pinch of sugar, about half a tablespoon, to balance the acidity of the tomatoes. I stir all the ingredients well and let it cook over medium heat, stirring occasionally, until the sauce thickens.

Now I'm going to grate the cheese and mortadella. For the pizza, I'm using a mortadella that has a flavor very similar to ham, making it ideal for this dish. Although I'm not a huge fan of mortadella, I decided to add it to the pizza this time, to give it a different touch and enjoy a combination of flavors. I grate the cheese until I have enough to generously cover the pizza. Then, I do the same with the mortadella, making sure it's well crumbled so it's evenly distributed over the sauce. Once I have both ingredients ready, I'm ready to assemble my pizza and put it in the oven.

Now, the long-awaited moment has arrived assembling the pizza! I start by placing a generous layer of the sauce I prepared earlier on the rolled-out dough. I make sure it covers the entire surface well so that every bite is full of flavor. Next, I place the grated mortadella evenly on top of the sauce. Although I'm not a big fan of mortadella, I think it will give this pizza a special touch. After that, it's the cheese's turn; I spread it generously on top of the mortadella, making sure it covers everything well. To finish, I add a pinch of finely ground oregano, which will further enhance the pizza's flavor with its characteristic aroma. Once I have all the ingredients in place, I place the pizza in the oven, which I've already preheated to 250°C. I let it cook for about 12-15 minutes, although this may vary depending on the intensity of your oven. I can't wait to see how it turns out and, most importantly, to enjoy this delicious homemade pizza.
