Today I am going to share with you a very familiar but very interesting recipe from our daily kitchen—Egg Fried Curry.

Sometimes, if there is no fish or meat at home, eggs become the biggest hope. I like this recipe very much because it can be made with few ingredients and in a short time. The taste of this egg fried curry with hot rice is really different.
🧺 Ingredients:
Eggs – 5 to 6
Onions – 2
Potatoes – 1
Green chilies – 3–4
Ginger paste – 1 teaspoon
Chopped garlic – 1 teaspoon
Turmeric powder – ½ teaspoon
Red chili powder – 1 teaspoon (more or less according to the spiciness)
Coriander powder – ½ teaspoon
Jeera powder – ½ teaspoon
Salt – to taste
Oil – as required


👩🍳 Cooking method:
First, I fried the eggs one by one. I did not fry the eggs too hard. I fried them lightly so that the yolk was a little liquid.
Now heat the oil in a pan. When the oil is hot, I lightly fry the potatoes. Then I added the onion slices and started frying on medium heat. When the onion is a little soft and light brown, add the minced garlic and ginger paste.
Then I grind it well with turmeric, red chili, coriander, cumin and salt one by one. When a nice aroma comes out of the spices and oil comes out, then you will know that the spices are well ground.

Now I put the fried eggs in the spices. I mixed the spices with the eggs well. Then I added green chilies and sufficient water.
I cooked it for 5-7 minutes on medium heat with a lid, so that the flavor of the spices penetrates well into the eggs. When the broth thickens a little, I turned off the stove.

This egg fried curry is very fun to eat with hot rice. Although it is simple, it tastes absolutely homely and satisfying.
