Hi everyone. How are you all? I hope you’re all very well. Alhamdulillah, with your prayers I am also doing great. Today I’m going to share a very unique and delicious sweet recipe with you. It’s called Balushai. It’s a traditional sweet from our country. So let’s get started — I’ll share the step-by-step recipe with you.

🍯How to Cook Balushai Sweet at Home:
⭐ Ingredients
For the dough:
All-purpose flour (ময়দা) — 2 cups
Baking soda — ½ teaspoon
Ghee or oil — 4 tablespoons
Plain yogurt (দই) — 2 tablespoons
A pinch of salt
Water — as needed
For sugar syrup (চিনির সিরা):
Sugar — 1.5 cups
Water — ¾ cup
Cardamom — 2–3 pods
Lemon juice — ½ teaspoon (to prevent crystallizing)
For frying:
Oil or ghee (deep fry)

🍩 Steps to Make Balushai
1️⃣ Prepare the dough
In a bowl, mix flour, baking soda, salt, and ghee.
Rub well using your fingers until the mixture looks like crumbs.
Add yogurt and mix gently.
Add a little water slowly and form a soft dough — don’t knead too much, just combine.
Cover and rest for 30 minutes.
2️⃣ Shape the balushai
Take small portions of dough.
Make balls and lightly flatten them.
Use your finger to make a small hole in the center (donut shape).
3️⃣ Make sugar syrup
In a pan, add sugar + water and boil.
Add cardamom.
Cook until it reaches one-thread consistency (এক তার).
Add a few drops of lemon juice and turn off the heat.
4️⃣ Fry the balushai
Heat oil on low to medium heat (too hot oil will burn the outside).
Add the shaped dough pieces.
Fry them slowly until golden brown and crisp — this takes time, so be patient.
5️⃣ Dip in sugar syrup
Put the fried balushai into warm sugar syrup.
Let them soak for 5–7 minutes.
Take out and let them set.
