A Portion of Croquettes and Memories

Yesterday, I was really missing a dish that I used to make a long time ago. It was back when I was in junior high school. I made croquettes for my final exam in home economics. The idea for croquettes came from my homeroom teacher. Of course, at that time, the class was divided into several groups. Since I was already used to cooking, I found this cooking practice very enjoyable.

I still clearly remember how unfamiliar I was with the name ‘croquette,’ let alone its ingredients, which turned out to include milk. Like… huh? Isn't a croquette just like a rissole, but made with potato as the main ingredient? Why does it have powdered milk? Is it even tasty? Well, for us, milk was only for sweet foods, not fried dishes like croquettes. Forgive our naivety.

Well, on the day of the practice, you know, I've been used to being in the kitchen since I was a child, so I was very excited to try out this ‘foreign’ and new recipe. I remember in my head that the result was delicious, and you were all surprised that croquettes could be that tasty.

To make a long story short, lately I've been reminiscing about that time and wanted to try it again, because for some reason, croquettes are rarely found in my life. So, since I've gathered all the ingredients, yesterday I decided to make croquettes using half a kilo of potatoes and the other ingredients according to the recipe.

However, you know, it turned out that half a kilo of potatoes made a lot. It was really a lot, so I ate it several times. Because I was only eating with my mother.

After storing the croquette dough in the refrigerator overnight, the next day I fried them in batches, according to the amount we would eat at that time. I successfully brought back memories of croquettes that had been buried since middle school. You can see how beautiful and plump my croquettes are. Ha ha ha

Looks yummy! Is it best if you dip it in mayonnaise? I like that it's golden brown and when you take a bite, I can imagine the rich flavor that goes with it.

Wow, your croquettes look so good! 😍 They actually remind me of the tuna pie from Jollibee, crispy on the outside and creamy inside. I bet they taste just as amazing!

Food and memories! This is true. There are these particular kinds of fruits that I call 'taste like childhood' eveytime I eat them. These fruits include a kind of blackberry we call 'baligang' in the Philippines and some indigenous fruits that are rare now. Foods like other things bring back memories.

I haven't eaten croquettes before and I think I should try it. It looks palatable. Thanks for sharing.

Oh I love cooking too, and this recipe is easy to make. The only need to do is have complete ingredients. Potatoes are really superb and we can just fried it too alone.

And what you cook looks crunchy. It makes me drooling. 😍
