Such a delicious spread. Your ideas for Samoussa fillings are infinitely better than the vegetarian version that is famous here in India. Another version we see here are spicy chicken mince/beef mince stuffed samosas and those are amazing too, so maybe you could try those too, if it sounds interesting.

Hahaha I must admit that the tuna and grated cheese mix isn't common, I'd never tried it before, but it was what I had in the cupboard and it made me want to 🤣

I'm quite curious, what is the vegetarian version famous in India made of? The spicy chicken mince/beef version makes me really want it too!

The vegetarian version is made with boiled potatoes and peas tossed with a bunch of spices. It's good, but once I had the mince version, I find the potato one a bit boring😂
Or maybe I prefer meat/fish over veggies, and others might fully vouch for the potato one, personal preference honestly.
