Happy weekend, dear Hivers! It's that time of the week for recharging and refreshing ourselves again. I always look forward to preparing my meal on weekends. This way, I can have better food choices, plus not to mention at cheaper cost.
Pork Ribs Soup
There's this meat shop near our house that supplies us with fresh meat. On weekends, we often buy our stocks such as spare ribs, beef tenderloin, porkchops, and pork belly from the meat shop.
For today's menu, we made some pork ribs soup. The secret for a delicious soup is the tender pork ribs so we placed the pork in a pressure cooker for 30 minutes. Some people use tenderizer for their meat or boil it for 2 hours in a normal casserole. Then add in all the other vegetable in the soup. We only added left over leafy vegetables from our fridge, which only consist of pechay.
My mom often request for soup in every meal if possible. She love to drinking something warm with her meals. So we granted her request.
Cucumber and camote delight
For appetizer, we sliced a few cucumbers and added a pinch of salt on side. It is said that eating oily foods with cucumber lessens the absorption of fats in our body. For dessert, we had some home made camote delight. It's actually just mashed sweet potatoes with condensed milk and shredded cheese toppings.
The weather is quite sunny today. I wanted to buy some ice cream in the nearby convenience store but I also dislike going out of the house. So I'll have ice cream some other time. For now, I'll enjoy the camote delight as our dessert. It's my first time eating this too.
