Nathen’s Bread Roll The Only Recipe You Will Ever Need

This is a fail proof recipe….

Listen, if you’re trying to make a bread roll and feel like it’s a daunting task especially after having to learn it from a youtube channel or reading a cookbook online, This recipe from @nathen007 is the only bread roll recipe you’ll ever need.

When compared to recipes out there, there are always too many steps involved and sometimes, you might not have the ingredients too. How do I know? Because I have tried and only ended up getting so worked up cause it failed. But I can promise you as much, this recipe is fail proof and even if you're a noob, you can do it too. You can find Nathen’s recipe below and you definitely should try it.

Baking Bread Rolls

For these bread rolls, I was making half of the recipe. So basically, all these ingredients listed are divided into two. My mom taught me this trick especially if I want to make it in smaller batches.

7g yeast
25g caster sugar
7g salt
60g butter
420g bread flour
1.5 cups water
0.5 cups milk

In total to make this soft milky bread is just 2 hours and 30 minutes. When you think about it, that’s just like the duration of a movie or 2 episodes of your favorite K-drama. While waiting for the dough to proof you can simply play those in the background or do something else that’s even more productive.

It should at least look like that once you mix all the ingredients. For more about the steps and the consistency you can check out Nathen’s post and leave a comment there if you want to try it. Even using half of the said ingredients, I still get the same result, it was crispy on the outside and soft on the inside.

Here are some notes if you don’t have fancy ingredients like caster sugar or butter.

  • You can simply make caster sugar from putting them into a food processor.
  • Butter can be substituted for margarine for cake and cookies, they are way cheaper too.

Do not forget to steam bake these rolls by placing a bowl of water on the lowest rack of the oven.

To achieve a crispier crust, steam baking is the way to go. I learned this when I was making Bahn Mi and through failure and failure, nowadays whenever I am baking bread, I always do that.

Since I am using a gas oven, it takes longer to actually bake them. So, you can add another 30 minutes. This is best to make in the morning and served during lunch or dinner. But in our household, this is a snack 😆and not a heavy meal. I also added strawberry jam inside one of the rolls and it was heavenly.

When my mom tried it, she was proud of my baking skills. I got so worked up easily when it failed even when my grandma was still alive, she would try to console me by saying “ That’s fine, you can always try again”. I stopped baking but recently, you can say I am giving it another shot, the thing is, I get better at it and become more patient 😂

While usually this can be served with mains, you can also eat it as snack and serve with iced coffee or iced milk tea like I did.

This is how I want my bread! I think I can do this too, or I can just ask Mom to teach me 😆. It has fewer ingredients too, easy to gather too if I may add - caster sugar is like powdered one ba? Omg, I am asking even though I don't have oven 😆

Caster sugar is indeed powdered one and you don't have to buy them. In the past, I kept buying this while actually I can just make them 🤣

Looks so yummy because it is crispy outside but soft inside. SO good and perfect for my coffee in the morning especially when it is still hot from the oven.

The tip on using margarine is spot on, butter is way too expensive. As a kid, my mum always used marg in a block specifically for baking, slightly different to the spreadable marg which is more difficult to use when making pastry.

I read that you use a gas oven. Do most people have ovens there? Here in Thailand, hardly anyone owns, or uses an oven.

...and thanks for another reminder. The strawberry jam inside looked delicious. I'd love to make jam but buying the fruit, frozen would be an expensive way to make it, there are a lot of strawberries that go into a little jar!
