I made this last year, and boy did it come in handy! Dresses up chicken breast beautifully, and yes, it makes a great salsa. I put it on salads, too. I imagine it would go with other meats, too. Thanks for posting the recipe so I can so easily find it again.

I will have to try it with chicken, I bet it would be a great stuffing in a large breast. ♥ Have fun canning. I am doing something every few days now.
Me too, although not on the scale you do it. I finally had to admit my one tiny freezer drawer is simply not enough, and I bit the bullet for a chest freezer. Freezing is the easiest way to preserve many foods it seems. I have yet to use my pressure canner, but I think about it a lot!
I have an upright and a chest freezer that is only 2 years old. I wish I had spent the extra and bought another upright instead of the chest. It is so much easier for me to keep organized with the upright. For now, I have to endure it, lol. Your new canner is winking at you! ;-)
