A Healthy Kind of Dish for Today's Lunch: Special Pinakbet with Chicken and Dried Shrimp

I am slowly eating the food that I deliberately avoid after my post nasal surgery. Slowly, and I don't eat them every day, although I am eating them now, it's more on when I just crave for them, after that I'll forget about them foro a while a maybe have them again after weeks or even months. There's just one food that I can't completely avoid and that's eggplant. This one is really my favorite so I can't just forget about it, lol. And on this recipe i'll be sharing today, eggplant is included because, that's what in the recipe. ƪ⁠(⁠‾⁠.⁠‾⁠“⁠)⁠┐

And in today's recipe, we'll be using dried shrimp which a pasalubong from a relative. I'm actually thinking if dried shrimp is also good with this recipe because usually people used the alamang or a shrimp paste for this recipe. Mama used fermented shrimp paste back when her small eatery is still operational. But this time, Mommy D used dried shrimp. There it is (⁠ノ゚⁠0゚⁠)⁠ノ⁠→

So the dish we're making today is Pinakbet with Chicken Meat and Dried Shrimp. We'll start by sauteeing the Chicken, we'll need it to soften first. I used garlic,tomato, onion, a pinch if salt, pepper, and chicken cube. We should seasoned the chicken so that it will taste more yummier. Ahh, I cut the chicken into bite size for it to cook faster. After that, I poured cups of water and let it simmer for five minutes.

After five minute, I mix the string beans because I want it to be cooked thoroughly. I don't really like it when it's half cooked like what other carinderia do here. I want it easy to chew.

And after another three minutes, I put next the remaining vegetables, there's squash, bitter gourd, eggplants and the okra, I also put one long chili in it.

Here's it is boiling hard after four minutes. I already mix the dried shrimp here. I can't really tell how it smells, but just by the look of it, I can already how good it is. Ehe. I mean, Pinakbet is actually one of my favorite. It's because it has eggplants, that's why, lol.

10 more minutes and it's finally done. It's ready serve now. Seriously, eating it with leftover rice is what I prefer. But coz it's lunch time, a hot white steamed rice is also good with it. Perfect ᕦ⁠⊙⁠෴⁠⊙⁠ᕤ

We enjoy our lunch with this. I love that it has a lot of vegetables in it, its more healthier. The vegetable was also cooked just right and just how I want it.

Monggo goes at the top of my list while pinakbet comes next. Pinakbet is my favorite since my younger years because the book I read as a kid always teach me to eat vegetables and I developed this habit of eating vegetables almost everyday. But with some twists like yours which included a chicken. It is very relevant in our situation now to be healthy, especially that life is demanding a more laborious responsibility from us. Your recipe is so delicious but the way you cooked it is new to me. I mean, I am not aware dried shrimp and chicken can go together in a pinakbet. I am now hungry look at your photos. Oh yes, monggo is really good too. But for me naman it's Pinakbet next is Monggo, i really love eggplant. Haha. Yeah, we actually just mix the available ingredients at home. And its really good.

When I was young, I didn't like Pinakbet. I rarely ate that viand. But when I grew up, specifically during college, I started to love eating Pinakbet, next to Monggo. 😊

We really have those disliked veggies as a kid talaga no, haha, same here, same here, lol. But now we all love it na.

Pinakbet growing up is not one of the list of foods that I like. But when I get older, I realized it's better than my choice of food when I was younger. At my age now, I prefer anything with vegetables. And that includes pinakbet! I don't like alamang back then but because of pinakbet I learned to kind of taught my taste buds to like it, too haha. But that dried shrimp is a great combi to pinakbet. I think I could eat 2 cups of rice because of that, lol!

Seriously, Pinakbet is good talaga esp it has a lot of mixed veggies in it. More kind of veggies, more healthy. It's really so good mapapa bonus ka talaga ng rice no, lol
