
I am slowly eating the food that I deliberately avoid after my post nasal surgery. Slowly, and I don't eat them every day, although I am eating them now, it's more on when I just crave for them, after that I'll forget about them foro a while a maybe have them again after weeks or even months. There's just one food that I can't completely avoid and that's eggplant. This one is really my favorite so I can't just forget about it, lol. And on this recipe i'll be sharing today, eggplant is included because, that's what in the recipe. ƪ(‾.‾“)┐




And in today's recipe, we'll be using dried shrimp which a pasalubong from a relative. I'm actually thinking if dried shrimp is also good with this recipe because usually people used the alamang or a shrimp paste for this recipe. Mama used fermented shrimp paste back when her small eatery is still operational. But this time, Mommy D used dried shrimp. There it is (ノ゚0゚)ノ→

So the dish we're making today is Pinakbet with Chicken Meat and Dried Shrimp. We'll start by sauteeing the Chicken, we'll need it to soften first. I used garlic,tomato, onion, a pinch if salt, pepper, and chicken cube. We should seasoned the chicken so that it will taste more yummier. Ahh, I cut the chicken into bite size for it to cook faster. After that, I poured cups of water and let it simmer for five minutes.


After five minute, I mix the string beans because I want it to be cooked thoroughly. I don't really like it when it's half cooked like what other carinderia do here. I want it easy to chew.


And after another three minutes, I put next the remaining vegetables, there's squash, bitter gourd, eggplants and the okra, I also put one long chili in it.


Here's it is boiling hard after four minutes. I already mix the dried shrimp here. I can't really tell how it smells, but just by the look of it, I can already how good it is. Ehe. I mean, Pinakbet is actually one of my favorite. It's because it has eggplants, that's why, lol.


10 more minutes and it's finally done. It's ready serve now. Seriously, eating it with leftover rice is what I prefer. But coz it's lunch time, a hot white steamed rice is also good with it. Perfect ᕦ⊙෴⊙ᕤ




We enjoy our lunch with this. I love that it has a lot of vegetables in it, its more healthier. The vegetable was also cooked just right and just how I want it.
