My number one favorite kakanin of all time is actually Espasol. It is also made with Glutinous Rice Flour, it is kind of chewy, sweet and it's really addicting - well, for me because it's my favorite. Lol. I usually buy Espasol in the tiangge-an every Sunday because that's the only day Kakanin are available in the market. (^._.^)ノ
Back then, I can still buy Espasol for four pieces for 10 pesos. But now they expensive and one pack with five pieces of it now cost 20 pesos. Although the size is kinda big, still, I don't really need much of it, I just want the small size for 10 pesos, and just to satiate my cravings for it.
I understand though why they had to increase their price. I have no problem with their pricing, it's just that, it's my choice to stop buying it. But if ever I really crave for it and I have spare money to buy, of course I will buy it. For the love of Espasol ᕦ(ò_óˇ)ᕤ.
Anyways, it really surprised me when Mommy D make an Espasol, oh yeah, homemade espasol! I didn't even notice it even though I can see her from my bed. That's the problem when you lost your sense of smell. You can't even tell what foods are being cook in the kitchen because you can't smell them.
So... It's one morning, I just finish taking care of our master cat needs. I headed to my room coz it's really hot so early in the morning. Then I noticed Mommy got busy in the kitchen. At first, I thought she's making a Banana Fritters again, but I was wrong. I only learned what it is after she's done cooking the Espasol and I decided to leave my room.
And because of that I didn't see the whole process of how she made the Espasol. I was regretting it coz I didn't see and recorded it. I think making it is easy, but stirring it so that it won't stick to the pan is what's making it harder.
I think it only had few ingredients, the glutinous rice flour, sugar and water, not sure if Mommy D put oil in it ⟵(o_O), but maybe?
Ahhh, I think it has Vanilla too, she also use powdered milk. I think the original recipe has coconut milk in it too but Mommy D didn't use it.
She also toasted some glutinous rice flour, to coat with the mixture and to complete the espasol. She did it before making the espasol mixture.
And here's what it looks like inside, it's really soft. It's still warm so it's much softer than it is needed it be. The taste is really good even without coconut milk. The sweetness is just right unlike what I usually had which is much sweeter. I actually prefer this version of Mommy D. UwU
She's able to make a lot of it and we had it as snacks or an after meal dessert for day. My hearteuu is so happy with this homemade Espasol (ノ^_^)ノ
