Sometimes, I crave for vegetable salad either as a main dish or an appetizer. We know that vegetable salad is a healthy food, and is packed with essential vitamins, minerals and antioxidants. So, it's better to have this kind of food in our diet. That’s why I made one today.
Let’s all take a look at how I did it.
A Healthy Vegetable Salad
INGREDIENTS:


- Cucumber
- Eggplant
- Camote (Sweet Potato) Tops
- Okra
- Tomato
- Lemon
- Onion
- Vinegar
- Salt
- Sugar (optional)
- Lukewarm Water
- Ground Black Pepper
- Garlic Powder
- Knorr Liquid Seasoning
PREPARATION:


Wash and clean the camote tops thoroughly, then cut.
Wash and peel the cucumber and cut it thinly.
Wash and peel the eggplant, then cut into halves.
Wash the okra, then cut the head part.
Wash and slice the tomato thinly. Peel and wash onions, then cut them thinly too.
Set all the ingredients aside.
COOKING TIME:


Boil the camote tops, but only half-cook.
After boiling, transfer to a strainer. Strain and drain. Then set aside.


Steam the eggplant and okra. Be sure not to overcook the veggies.
After steaming, remove them from the pan and transfer to a plate. Then slice the eggplant and the okra.
Now let's mix all the ingredients.
In a bowl, mix 1/2 cup of lukewarm water with a pinch of salt, a little sugar, garlic powder and ground black pepper. Add vinegar and lemon juice. Mix them well.


In another bowl or platter, mix all the veggies carefully and then gradually pour the liquid mixture and mix them carefully until well combined.


And there it is... a healthy and yummy vegetable salad for the day. This is best paired with salted eggs or just plain boiled eggs. Some fried chicken or grilled fish is a good combination, too. I hope you like this kind of vegetable salad.
