A Healthy Vegetable Salad: Appetizer of the Day

Hello everyone, I hope you are all well today...🙂

Sometimes, I crave for vegetable salad either as a main dish or an appetizer. We know that vegetable salad is a healthy food, and is packed with essential vitamins, minerals and antioxidants. So, it's better to have this kind of food in our diet. That’s why I made one today.

Let’s all take a look at how I did it.

A Healthy Vegetable Salad



INGREDIENTS:

  • Cucumber
  • Eggplant
  • Camote (Sweet Potato) Tops
  • Okra
  • Tomato
  • Lemon
  • Onion
  • Vinegar
  • Salt
  • Sugar (optional)
  • Lukewarm Water
  • Ground Black Pepper
  • Garlic Powder
  • Knorr Liquid Seasoning

PREPARATION:

Wash and clean the camote tops thoroughly, then cut.
Wash and peel the cucumber and cut it thinly.
Wash and peel the eggplant, then cut into halves.
Wash the okra, then cut the head part.
Wash and slice the tomato thinly. Peel and wash onions, then cut them thinly too.
Set all the ingredients aside.

COOKING TIME:

Boil the camote tops, but only half-cook.
After boiling, transfer to a strainer. Strain and drain. Then set aside.

Steam the eggplant and okra. Be sure not to overcook the veggies.
After steaming, remove them from the pan and transfer to a plate. Then slice the eggplant and the okra.
Now let's mix all the ingredients.


In a bowl, mix 1/2 cup of lukewarm water with a pinch of salt, a little sugar, garlic powder and ground black pepper. Add vinegar and lemon juice. Mix them well.

In another bowl or platter, mix all the veggies carefully and then gradually pour the liquid mixture and mix them carefully until well combined.

And there it is... a healthy and yummy vegetable salad for the day. This is best paired with salted eggs or just plain boiled eggs. Some fried chicken or grilled fish is a good combination, too. I hope you like this kind of vegetable salad.

Upon reading your blog and viewing your photos it's make me want to go home. I missed these kinds of food so much. It's hard when you are working in other countries specially as Domestic helper, even if you see those vegetables in the market but you don't have the freedom to buy it and cook it for yourself. Now I'm salivating when I see those photos of yours .

Oh my God Ive been craving for these. These vegetable salads are appetizers, literal appetizers that it makes you eat until the last scoop of rice. Hahahah

This is very healthy and easy to prepare salad. And, it's very cheap too! When I eat this kind of food, makes me feel like I'm 'home'.

Hala galay! We just made this kind of vegetable salad earlier this week (tho there's no okra in it because some of our family members didn't like it). We even used the water where we boiled our camote tops and mixed it with lemonsito juice and a little sugar to make juice. Seeing this made me crave it now—like this one can really make me eat more rice than usual >v<! And pepper~ I really like it when it's mixed with veggies because it's much tastier. This vegetable salad looks delicious and super healthy @arashi0416.. I love how it’s packed with so many fresh ingredients.. I’m definitely a fan of salads, and this one seems like a great way to get those vitamins and antioxidants in.. Although, I have to admit, I’m not a big fan of eggplant, so I’d probably leave that out..🤣

Super yummy!!! A little back story. Few years ago, I worked from a city far from home. Pandemic happened and we got quarantined. Salary got delayed and what saved me and my friend is this vegetable salad. Some days we have mixed vegetables , on other days steamed okra but most of the time camote tops plus ginamos haha. Looking back, I am happy we survived those days plus we know we were healthy. Thanks God for blessing me today because I can now eat this paired with fried chicken. Thanks for sharing. you made me reminisce good old days. 😍
